Ingredients for making candied papaya jam:

 1 kilogram of green papaya (approximately)

 700 grams of refined sugar

 1 liter of filtered water

 1 tablespoon of baking soda

 cloves (to taste)

 1 cinnamon stick

 papaya cooking water

 crystal sugar to decorate the sweets

How to make Candied papaya jam:

Set aside the ingredients needed to prepare this candied papaya recipe. We suggest that you use green papaya, so the preparation will have some important processes for the papaya to be without the bitter taste that green fruit usually has.

Tip: if you want to prepare more candy, double the recipe.

It is very important that the fruit is sanitized in a solution of water with sodium hypochlorite. Leave it in this solution for at least 15 minutes and then wash it under running water.

Then make cuts (scratches) in the papaya skin lengthwise to extract the sap from the fruit, thus preventing the candy from having a bitter taste. Wait at least 1 hour, then cut the papaya and remove its seeds.

Cut the papaya into similar-sized squares (while keeping the skin).

Prepare a solution with 1 liter of filtered water and 1 spoonful of baking soda and leave the papaya pieces in this solution for at least 30 minutes. This process is very important for the candy to be crispy and firm on the outside and soft and juicy on the inside.

After that time, prick the papaya pieces with a fork (this will help the syrup to penetrate the fruit and give it more flavor).

The next step of this candied papaya recipe is to place the papaya pieces in the pan with water (enough to cover the fruit pieces), for your first cooking. The papaya will cook at the same time as the syrup, in separate pans.

To prepare the syrup, heat 1 liter of filtered water, 700 grams of sugar, cloves and cinnamon. Let it cook for about 30 minutes over medium heat until the syrup starts to blend in, as shown in the photo.

After that time, drain the cooked papaya and, with it still hot, add it to the pan with the sugar syrup.

Let the papaya cook in the syrup for another 20 minutes or until the pieces of fruit are translucent and shiny, as in the photo. Turn off the heat at this moment and let this sweet rest until the next day in this syrup.

The next day, bring the sweet to medium heat again until the syrup starts to foam, as shown in the photo. This can take about 20 minutes or less. From that moment, let it cook for another 10 minutes, stirring occasionally, so that all the pieces start to crystallize slowly.

Remove the candied papaya pieces and let them drain in a slotted spoon or sieve to remove excess syrup.

Pass the still warm crystallized papaya pieces in the crystal sugar and place them in an open jar, so that they dry.

Your candied green papaya candy is ready to be savored! You can keep it in compote for up to 10 days.
